Carmela's Food Blog: Easter Shortbread Cookies

Finished Easter Shortbread Cookies!

Easter Sunday always brings us a holiday feast of cooked meats, desserts and chocolate. Every holiday I try to explore a different cake or cookie. I've tried a few shortbread cookie recipes, but this one caught my eye because I had plenty of thyme stored in the freezer. It's an easy, basic shortbread cookie with a zest of lemon thyme. I added a sprinkle of sugar at the end to satisfy my sweet tooth.

Preheat oven to 350 degrees 

What you will need:
2 1/2 cups of flour 
2/3 cup of superfine sugar 
1/4 teaspoon sea salt 
2 sticks of unsalted butter 
2 tablespoons of finely chopped lemon thyme 
2 tablespoons of sugar 

Sift the flour in a large bowl. Add the salt. Set aside.

Mix the butter and sugar together with an electric mixer until its creamy. 

Add the flour mixture slowly into the butter. Add in the chopped thyme. Mix until combined.

Form it into a round ball, wrap it in plastic wrap and refrigerate it for 25 minutes. 

Take it out and form flat round circles. Place onto a lightly buttered cookie sheet. Cook at 350 degrees for 15 minutes, then open the oven and sprinkle sugar over the cookies. Bake again 5 minutes more. 

Add sugar and bake 5 more minutes


Makes approx 25 cookies. 
These are delicious served with coffee or espresso! Make them in advance!

Wonderful recipe! Do you know there is a blog posting your stories without even linking back to your blog? They are doing the same thing to me... Here is the link -- http://mobwives.freeish.info. I don't know if you condone this, but if you don't, we should take a stand here, together, and make them stop. I just published an exclusive, with copyrighted photographs -- and they simply reposted it on their site... They have a huge number of followers, too, and appear to have been doing this for some time...

We are aware Ed. I have a very big issue with their ripping off our blogs.

I don't even like the link back if an individual posts
our blogs in full w/o asking us.

It is our belief they've installed a tool to automatically repost our blogs.

They can do it easily by subscribing to our RSS feeds... I agree, I would never do what that blog is doing, not in a million years, even with a backlink.... what is odd is that they have thousands and thousands of followers, which I don't get. All I know is I get NO traffic to my site from that site... It has to be a fraud, the whole thing.... The "followers" box could just be a JPG... You don't think Mob Wives/VH1 is behind this, do you? A subtle way of payback because they don't like our coverage? I would expect they'd be unhappy with me -- but they are certainly targeting both of us.

Also I have a tip for you -- you may have already heard -- they started filming Miami Mob Wives... I decided a while back to cut back on my Mob Wives coverage... Honestly, I just find the show boring as hell; maybe it's because I am a man, not their target demographic, but I just can't watch it anymore...

HELEN, We still want all of our content taken off your site. We have asked you several times. We have no issue with the Huffington Post, they have not taken any of our work. Our only issue is with you. So, once again, please remove our ORIGINAL Blogs from your site.
